I have to use Wi-Fi calling at my house because of poor reception. I never turn it off. When I'm not, I'm able to make and receive calls just fine, and when I return home, the phone automatically switches back to Wi-Fi calling.

You might want to check the phone settings. After the update on my AT&T S21 Ultra, a few settings changed. Had to go into the sound settings to get things back to the way I had them.

You can leave Wi-Fi calling on all the time. That's what I do. It'll kick in only when needed.
