Odd. I can confirm that this doesn't happen on mine or my wife's S5 so it's definitely something with your phone that is off

My wife updated to 5.1 and wishes she hadn't. Ever since the update she's had ridiculous issues which she hasn't been able to resolve even after hard resetting. Finally I wound up rooting and installing a custom os to fix things.

Sorry to hear about the issue. If it helps my wife and I both have the S5 and if I'm ever on speaker she says it echoes really badly. Not sure if it's related but thought I'd share in case it's is a general Samsung issue that people are seeing regularly.
