Update: after several weeks of using the "docking cable" solution (as described above) to "tell" my phone to connect Bluetooth to this car radio instead of watch, I am pleased to report that it is working seamlessly for me. Also handy to have tasker launch my Sat Nav apps at the same time.

That sounds right. I don't believe Tasker has any functions more fine gained than connect/disconnect Bluetooth device. If it were possible to disconnect just the audio from Tasker then something with NFC tags or power cord detection might work. Thanks
