The flashing isn't tough at all. But the full reset is a PITA.

You could do the manual flashing and keep your data. Although to make such a huge jump, I'd do the full reset after flashing. Or just run the factory image installer.

Have you tried, after powering off, to remove your SIM, power back on and then via WiFi, check for updates?

I'm a little confused about what happens for those of you that power off, remove your SIM cards, then restart the phone and connect via WiFI and then check for updates. Does nothing happen at all?

You can absolutely flash and not lose any data. It's not fall off a log simple like accepting an OTA, but you can flash any of the factory images and not lose data, assuming you do it correctly and not follow Google's directions.
