On the Epic, you can copy text from the stock web browser by holding SHIFT down on the keyboard and dragging on screen. I haven't seen that work in any other applications, so it seems to be specific to the web browser. I'm not sure if that's close to what you mean.

In the stock texting app, I just press-hold and an option popped up to paste. Paste worked fine. Good hint on the shift-drag.
