What is "bloat"? Any app you (the user) don't want on your phone. What's bloat to me may be an essential app to you. Personally, I'd like to see ROM developers (including VZW developers!) not include ANY app that's available on Google. I'll pick and chose my own, thanks!

One thing we can all agree on, the stock android email application totally sucks! There are other email apps available but they don't suck any less. If you want decent email you have to get a BlackBerry or a Windows phone, I cannot see any reason Android can't provide a usable email client but...

I don't think so, I suspect that an OTA update will not be available for rooted phones and, if it were, you'd lose root. You're better off waiting for the developers to create ICS ROMS, they'll be coming very soon after ICS OTA arrives.
