Cyanogemod 7 is a classic, and for good reason; it's quite similar to the android standard, but is mad customizable. Certainly a good place to start. I suggest messing around with launchers, too.

Thumb Keyboard. It's gorgeously customizable. Aesthetically and practically. I have a sick daft punk background on mine right now. It costs, but I bought during the 10 cent sale, so I'm laughing.
