Long press your power button. There's a screenshot option in the context menu that pops up. I'm using the IHO BACKside rom, and I used Harmonia before that. Both have the option, I believe, so I imagine it's CM standard. I'm new to the phone modding scene as well.

My setup is nothing special. I've not done too much customization. I'm using Androidian for my CM7 theme, and Matte Curve theme for my ADW dock icons.
