Since Lollipop, why am I unable to open apps?

Lollipop has problems

Ever since lollipop update on my Samsung galaxy core prime all of my app keeps saying that they are not responding. Also there is a lot of lag it would take 15-20 seconds for it to do anything

Hello Eoin, welcome to the forums! Have you already tried wiping the cache partition? This process is recommended after a system update and will delete some temporary files that could be causing some problems. These instructions from T-mobile should work.
