how do I get back my voice activation for texting on G5 Plus?

Until recently I could always just tap the microphone icon to use voice activation to vocally dictate my texts with instead of typing everything out longhand. For the last week or so, when I tap the icon it gives me the message "do you want to allow gboard to record your voice messages?" I don't want them recording my voice and/or snooping around in my text messages. Is there any other way way or app that will let me have the voice activation ability for texting again?

I think you have to Allow that Permission for voice dictation to work

I never had to allow that permission before? I just tapped on the microphone and spoke whatever I wanted to write and there was no announcement asking me to allow them to record my voice messages at all. This has just started happening recently with no explanation.
