I have a side business and rely on texts to correspond with customers. I am looking for a texting app that works over wifi and has folder sorting options like email does. Another solution is to send and receive texts through email but I haven't found any suitable solutions thus far.

There is no such thing as texting (specifically, SMS/MMS) over Wi-Fi. These are both cellular protocols; some services get around this limitation by using a "go between" but that would be carrier-specific.

As to arranging conversations in folders, I've never encountered an app that does this, although it does sound like a good idea. Perhaps you should contact some of the developers out there and suggest it...

In Hangouts, you organize by contact. That works well for me.

SMS Organizer does exactly what you are looking for.
It can automatically arrange text messages into user defined folders, based on 'rules' set by the user, just like that in emails.
It also comes with other features like auto-delete SMS, better search, rule delay etc etc.
