Helix Launcher from marketplace is what i use. It's great and i think it goes up to 7 screens. Give it a try.

I use Home++. The live wallpaper dont work with it yet. I like it for the bottom dock and you can remove the top bar on the phone. o plus more screens!

I use ClockworkMod. It gives you 5 home screens, and it also gives you the 3D apparently drawer. PLUS...yo get Dot Navigation. It pretty much turns your Droid into a Nexus 1.

I just loaded Helix Launcher and I've been happy with it so far. It can do up to 7 screens, but I can't imagine needing more than 5.

You say that now, but once you try 7 you'll be wondering how you ever got by with 5. I just made the switch up to 7 after having 5 for a while, and now I have those extra two filled out nicely

I have 5 currently, and cant even fill them. I made one of them a designated 4x4 calendar widget though which is very nice!

I like GDE personally. Like prometheus said, search the Android Apps section. There are many threads on homescreen replacements.
