I am new to the whole Android world in general and rooting in particular. Just rooted my phone last night, as a matter of fact.

Am wondering if anyone has set up an IPSec Group VPN yet with the Droid X using OpenVPN or VPN Connections, and if so, how would I go about setting that up?

There is an open project for ipsec vpn here. get-a-robot-vpnc - Project Hosting on Google Code

I think there are currently issues for Droid X and Galaxy S phones. It can be found in the market as "VPN Connections". The last update to the apk was on jun 12. Give it some time for developers to get the new phones into their hands and im sure well see functionality soon.
