I moved my Verizon SIM from a 2014 Moto X and the 6P is working fine (pretty great, actually) but am wondering if I need to tweak any of the APN settings in order to optimize performance. Or better to just leave it alone?

Nope, just leave it. It's all done automatically. The only issue you may have is if you had Visual Voice mail or Basic Visual Voice mail (the free one), you'll start getting weird garbled texts each time you have a voicemail. There is no app currently for the Basic (free) Verizon Visual voicemail for the nexus 6P, only one for the $2.99 a month version.

I started using Google Voice as a work around and so far, it's been working pretty good.
