IIRC... the OnePlus 7 series on stock OxygenOS and the OnePlus 6 series on the latest Open Beta release, are running the latest version of ZenMode, v1.3.0, see screenshot of my 6T on OB16. This has more options than the Zen Mode, v1.2.0, on the latest stock, stable OxygenOS releases for the OnePlus 6/6T.
You could download Zen Mode v1.3.0 from apkmirror and sideload it.

I am rooted and just use Titanium Backup to freeze Zen Mode.
These are the options on the new Zen Mode v1.0.3, which allows multiple durations of Zen Mode and the turning off of notifications... among other things. This version should be included in the next stable OxygenOS update for the 6/6T series.
Which Zen mode app version do you have?If oneplus doesn't give us a way to turn this off very soon I'm either going to learn how to root this phone or use it for stress relief with a hammer

You could try this. Make sure you have the Zen mode tile in the quick settings panel, if not tap the edit/pencil icon and drag it there. Tap the tile, go through the three explaining screens and tap next, tap the clog/settings icon top right and see which options you get.1.2.0
