Depends entirely. The touted most secure phone in the world, the blackphone, is built with Android. Then you have Samsung and Blackberry both offering Enterprise level security claims.
UI is irrelevant. While iPhones have only one same UI, each Android launcher can change the basic UI of his phone, personalize gestures, icons, icon grids, even recreate the UI of iOS or Windows Phone.
Performance depends. iPhones usually have the upper hand in single tasks, as a single core in their chips are more powerful than the single core in Android chips. However, Android uses more cores which play together better, so it does better in multitasking. iOS suspends most apps running in the background while Android can let some stuff continue to run.

In the end, no OS is objectively better in performance, security, and UI. You just have to try the phones out and see which suits you best.

Far easier to customize an Android.

I have an iPad for things that Android WON'T do (certain CAD and saving web classes on a craft site) but I can't get rid of the damn logon every time I turn around. It's only used for MLB on my nightstand! I have nothing personal on it, and would love to remove name and address from one of the screens.

That is like asking if Ford or Chevrolet is best or Honda or Toyota is better. Too many variables for an objective answer.

If you are looking at Geekbench scores, the iPhone (IOS) will always win the Single Core score scores.

Security, meh, I don't think there is an exact answer since both IOS and Android have various bugs and loop holes in security that are being constantly patched.

UI, I think that comes down to personal preference and what you are used to. Both IOS and Android have fairly good UI. Both have had many years of tweaking and improving.

Windows VS macOS? Similar question. I would to say that they are constantly growing, otherwise they will be outdated.

As an iPhone user. I’d say Performance and UI can go to android although I prefer Apple. However Security definitely goes to Apple. I don’t even see how that could be a debate.

I am using the both phones, but i found android more convenient user friendly, if we talk about the security, both phones are good, not perfect.

Ill add this. With android there are far more unlocked and/or non carrier/branded options out there vs. iOS. And even if you get your iphone "unlocked" you still cant get rid of the damn carrier ware baked into it.
