Noob question: editing for images of text (black on white)

I often take screenshots of something I'm reading, to share on my blog or social media. I want to be able to remove extraneous text, and leave (or expand) a margin around the edge, where I can add the source and sometimes my website address.

Mostly what I share is black text on a white or near-white background. I'd love to be able to copy from a clear area of background and paste out over the unwanted text. But most image editors seem to be more about removing blemishes from selfies, and their tools aren't suited to my needs.

Suggestions? Thanks!

Although I've never wanted to add text to any of my photographs.. it is possible to acquire an app which allows you to add text to your images, assuming you wanted to do this via your smart device. One might try searching Google Play for "Add text To Photos" App (For instance: Phonto - Text on Photos)
