Welcome to the forums!

Pull up the Pokémon, click the Hamburger menu at the bottom, choose "transfer" and transfer it to the professor to get candy.

Hahaha! I've actually been referring to candy as Pokémulch for a while, and transferring Pokémon as mulching Pokémon...

I made myself feel bad...

As other users have said, you can transfer your Pokémon to the Professor to get more candy. However, you can always have more than one type of Pokémon. I hear Hypnos are very good at taking over Gyms, and I've seen a few Trainers with more than one Hypno kickin' around.

Oh and also don't delete all of them. The pidgeys are actually good to farm and evolve to get experience points, then you can transfer what you evolved.
