Samsung Smart Switch™. The apps themselves don't actually get transferred--the
list of apps gets transferred, which makes it easier for you to select them to reinstall on the new phone. Any locally saved data from those apps on your old phone probably won't get transferred to the new phone, although data that is saved to the cloud should be easily accessible. So for example, a game's progress that is only saved locally won't get transferred to the new phone, but a game that saves your progress to the developer's servers (e.g., by logging in with your Facebook or Google+ account) will allow you to pick up where you left off, as long as you sign in with the same account.
Is the replacement SIM you inserted in the new phone for the same line as your old phone? If that's the case, then you have to activate the new SIM, which will deactivate the old SIM. Contact your carrier (or check their website) for instructions.
