Is rooting like jailbraking what i mean is that do you have to wait for a new root/jailbrake after a new system update like apple or can you root no matter the version? Sorry i am a andriod noob i just made the leap to andriod yesterday.

It's worse than jailbreaking. A new iOS can be jailbroken as soon as someone finds an exploit. A new version of Android? There's a different version of that version for each phone, so what might work on 5.0 for one phone might not work on 5.0 for any other phone.

But to answer your exact question, yes, you have to wait until a root exploit for that version is found. It's pretty much the same thing in iOS (BSD-based) or Android (Linux-based) - some way has to be found to get temporary root, so that the OS can be given the ability to elevate apps to superuser status.

But popular phones are rooted pretty quickly, i believe there is a root for S6 already? It also depends if you're with a git of a carrier ( model number)

From my awesome Note 4 SM-910F, on modded lollipop 😎
