Some of these themes are incredible. I stay with TW because I imagine the phone is made to work with it, so the phone will work better. Is this even remotely true?
No. Touch Wiz is a launcher made by Samsung to sit on top of Android. Just like every other launcher. Even using my Note with SPen, I don't lose any features by switching launchers.

The core functionality remains, the window dressing changes.

Android is designed to use many different systems of launchers. Touch Wiz is just one. If it did indeed hurt functionality, it would be restricted by Samsung, since the device is a profitability center for them.

No one is touting Z launcher from Nokia?

It is one of the cleanest launcher experiences I have tried. What you need is usually on top, a scribble will turn up any apps not on your home page.

I have used Nova Prime on every Android phone I've had. It gets better year after year. I used TW for about 10 minutes and loaded up Nova. I'm not done setting up yet though. Just got my Note 4 yesterday.

Had Nova Prime a long time ago but was using stock or Google Now. I like the swiping gesture on the home button for Google Now of devices with software buttons so I just set up Nova Prime to be a cross between the layout of Stock with the icons and appearance of Lollipop! Swipe up for Google Now and I'm golden. Can't get the swipe down for Expand Notifications to do anything though!!

The swipe down for notifications works great on the latest Nova Beta. You can download it here and it works perfectly:
