So, Verizon just sent me a new SIM Card.

Aside from removing the old one and replacing it with the new one, what more do I need to do?

Make sure the device is totally off before swapping the SIMs.

Unless you got instructions to re-activate and were given a new number I would suggest the SIM card has been provisioned for your present number and you only have to install it.
I believe if more is required you will see a notice to re-activate once you have installed the SIM card and rebooted the phone.
The long and short of it is, you can't harm your phone by powering the phone down, taking out the battery to remove the old SIM and inserting the new SIM, reinstalling the battery and back cover and rebooting.
