Quite often I will email the odd file to my Note 4 that I want to store on my phone. I then open the email and download the file to my device. Generally, the file will be accessible through the File Manager under Documents. However, after a few days of not accessing this file, it will no longer appear in the list so I will email a copy to myself again. Then, after a few days later it will be disappeared again. Any ideas?

Welcome to Android Central! After you download the file, open your Downloads app--is it visible there? If not, use My Files and look in the Download directory. If you don't see it there, then the browser might be saving downloaded files in a special directory--use My Files to look for it. It might be a subdirectory of the /data or /Android directory.
