So from watching review videos of the Note5 on YouTube, I have seen instances where reviewers will hit their settings gear and their settings are displayed in a different layout. They will have a grid layout of icons for quick settings and then can scroll vertically to get to the other areas within settings. How do I go about changing the way mine is displayed (see pic)? (I really like the grid view.) Thanks for the help and responses.

The way Settings displays is one of the areas that differs by carrier. The At&t version displays in tabs as depicted in your picture, rather than in a list view. For At&t, there's no way to change how it displayed.

Now that you mention it, those devices in the reviews were from T-Mobile I believe. This sucks. But I'm glad to know I wasn't just overlooking some obvious setting. Thanks for providing an answer!
