Will the Note 7 have Gorilla Glass 5?

I'm surprised that most people don't know it ACTUALLY exists, and existed over a year now. It's Moto's Shattershield display and it has been used on multiple phones already. It didn't get that much attention because it wasn't manufactured by Corning.

Like others said, it is a plastic display. And while it won't shatter, the screen can still be dented even from a 5' drop, and the shatter shield warranty won't cover this damage

Actually, the Note 7 will have the new Wolverine Glass which scratches the user for having the audacity to hold the phone. :-!

You will have to flip a coin on this one. The S7 and S7 Edge had GG 4 and it seemed to scratch much easier than past phones.

What ever it has I hope it's better than glass the S7 & S7 Edge had. :'(

Samsung would be in constant contact with Corning and would be been shown the latest and greatest they were working on, for sure.
Samsung have already demonstrated that they will not hesitate to drown the market in mid range and low range phones, will can help empty out the stocks of old-grade gorilla glass production material, and thus Corning would not need to withhold their latest and greatest product from being used in one of their top customer's latest and greatest phones. There is no legitimate reason the Note7 wouldn't have GG5, even if hell did freeze over.

I don't think the back of the S7/Edge are GG4, but I'm not sure.

It is not. The glass on the back is softer - a standard razor will scratch the back of the s7 but not the screen.
