Don't see why not. All accessories from Samsung are always for sale at their site. Plus, you can always get 3rd party ones, just like with OTG Cables. Here's one of many:
Xuma USB Type-C Male to Micro-USB Female Adapters (2-Pack) B&H

Yup, just be careful and read the reviews on Amazon. 'Brick and Mortar' stores usually have less shady sellers, and given the problems some have been facing with USB-C cables, you want to make sure you're not getting a bad-quality one.

Make sure to either get a genuine Samsung one or one approved by Benny.

Couldn't you just buy type C cables for the same price? It seems that having a new cable would be better than worrying about an extra connection coming loose and more weight on the phone's usb port.

Question - I thought I read somewhere that the USB C to micro USB adapters don't allow for Quick Charge. Anyone know if that's true before I go out and buy a bunch of these adapters?

Not if you have pre-wired accessories, like chargers or OTG dongles.

This is a good point but the only separate cable on Samsung's website is type C to type A Galaxy Note7 - mobile-accessories | Samsung US

I can see the issue with the dongle. Chargers should use type A though.

Your link just takes me to another forum page, so I can see what it shows.
Isn't type A to type C what you need?
I wasn't referring to just Samsung cables earlier.
There's plenty of manufacturers that make decent cables.

Some chargers, especially car ones, have the micro-USB output but no way to change the 'input' (or, no USB port in the charger, just a cable coming out). Those are the ones you'll need the adapter for.

That's why I avoid fixed cable chargers.
