They come from Samsung, so yes, you should still get OTA updates. There won't be many of them though, as I think the Note 9 is now on quarterly updates only

No, U1 models are the unlocked ones. U models are the carrier versions. But firmware is 100% interchangeable between the twoI thought the unlocked Note 9 was SM-N960U?

Yeah I've bought the unlocked version for last few years , I use to buy carrier versions to flash the unlocked version so I purchase unlocked now.Ah, I see.
The versions I have had in the past had no carrier bloatware which is quite nice. I don't need T-Mobile's software.
