If you enable syncing, which is on by default, then in Contacts setting menu you can sync them. Apps you purchased will always be available with your account wherever you login.

You can backup you apps and other settings using MyBackup and Titanium Backup, but I prefer Androzip which can backup apps directly to APK.

Can't help you with the messaging, but there's probably a way.

SMS messages is an easy answer - use the app "SMS Backup and Restore" it works great, you just have to find a way to copy the .xml backup file it creates over to the new phone. I used dropbox for that.

The only real downside I found to upgrading to the Note was that a few games (The Sims ones for example) refuse to play on it based on the device profile / screen size / who knows what else.
