Samsung have just released the stable update for Android 11 and UI 3.0 for the global Galaxy S20 range, not the S20 FE as beta is only just starting to begin for that model.

It is a FOTA, (Firmware Over The Air), update and you should check... Settings > Software update... to see if it has arrived for you.

Be advised, it may take a little longer to arrive on some carrier branded models.

The update = G98*BXXU5CTKG

Download size = 179.82MB

Build date = 21st November 2020

One UI version = 3.0

Camera version = 11.0.00.91

Android Security patch = December 2020

This is the 17th stable update in 264 days = 1 update every 16 days on average

My SIM is Verizon, but the device itself is unlocked.

So, not a global Exynos model obviously.

Here I am going to have to defer to my U.S. colleagues as I am guessing that you have the Snapdragon unbranded SM-G98*U model of Galaxy S20 and unless you can provide me with your CSC code and model, (S20, S20+, S20 Ultra), I can help no further.

[EDIT] Speak of the devil! Nicely ninja'd by mustang7757. Thanks! :)

865 is the Snapdragon chipset. I was after your model of S20/S20+/S20 Ultra

To locate your CSC code, go to...

Settings >About phone > Software Information > Service provider software version.. where you should find a 3 digit code as per the screenshot, below.
