I don't believe I've read about setting a default home screen when pressing the home button.
I noticed a few weeks ago a little house on the top right corner of the home screens when they're all in view (inward pinch), the one in blue is the one that will be displayed when the home button is pressed.
For me this is very handy as my home screens are arranged by the following themes: Media, social, games, work related stuff, etc. So basically what I do is set one according to what I'm up to during my day for even quicker access to the apps.
