    I'm using the default player on my Verizon Galaxy 3S phone (the one that's just called 'Music' with a little blue circle and a green music note as the logo). I just build a playlist and now the MP3s are sitting there in the order in which I added them; I want to alphabetize them by name, but when I go to 'change order', it only seems to have the option to drag and drop songs. Is there no function to just alphabetize them?

    No. Music doesn't manage playlists, it just allows you to create them and reads them. Some players may allow you to sort them.
