My S5 with 6.0.1. Is very slow at opening text messages and other apps. I'm trying clear up storage space. I'm at 15gb. Can't find where all this data is located. Any ideas?

You posted in the S5 Rooting/ROMs forum -- is the phone rooted, or do you want to root the phone in order to uninstall bloatware?

Do you have the 32 GB version? Is it a carrier-specific version? Some of those older Samsung phones had a ridiculous amount of bloat.

Oh, I posted in the wrong forum. It's only 16gb. It definitely has a lot of bloatware. I hadn't thought of rooting. Is that a better way to free up space?

If you want to free up storage space, then that's the best way, since you otherwise can't remove bloatware. Make sure the app you remove isn't important for some other function, though -- there are probably some good threads here or in other forums about which bloatware apps are safe to remove.
