I do not want to do the Verizon software update for my S5 because it breaks towel root. (I am not rooted however). Long pressing the notification from the pull shade let's me call up the app info and the app that comes up is called SDM. This app appears to be tied into lots of stuff so I was wondering what happens if I force close the app.

If you were rooted, you could freeze SDM, and it would not update, or notify you about updates, however, you say you are not rooted, so I don't think that it would let you touch SDM, or if you did stop it, it would most likely restart...
I have it frozen, and have not noticed any problems.

You are correct. I tried to force close SDM and it just restarted. At least it didn't hurt anything.
