Unsync/Remove Accounts?

Unsync/Remove Accounts

Hey everyone, this may be a stupid question, but I can't seem to get this figured out. To make a long story short I inherited my wife's old S5. I have my stuff transferred over to it now, but I can't figure out how to remove her so I can sync my google account up.

In stock Android OS, it would be Settings -> Accounts -> Google -> menu -> Remove account.

Would it matter if I'm using a different launcher? When I go into Settings-Accounts-Google, it comes up with the accounts she had synced (her personal account, and business account). Then at the bottom it has options for Sign-In & Security, Personal info & Privacy, and Account Preferences. But all I can find in those is Delete your account or services, and when I go to that it asks about deleting the account entirely.
