I noticed there is the flash, then their is two things to the side of it that almost look like little cameras and I was wondering, what are those and what do they do?

Hi, these will be sensors - usually the light sensor, proximity sensor and gesture sensor. Not to mention the LED notification.

Actually, he's asking about the sensors on the *back* of the phone, next the the camera flash-light. The light/proximity/gesture sensors are on the front of the phone. I *also* am trying to learn the answer to this question; the S5 user manual does not appear to answer this.

It's a heart rate sensor which was introduced in the Galaxy S5. Open up the S Health (now called Samsung Health) and press on the heart rate option and follow the instructions on the screen to measure your heart rate. It's a pretty useful feature!
