There are around 200 different firmwares for the international, G900F, model. Which firmware you need is dictated by your phone's Product Code. Install Phone INFO ★Samsung★, free from the Play Store and post the Product Code that it shows.

    Model SM-G900F
    Model name GALAXY S5
    Country France
    Version Android 5.0
    Changelist 5508620
    Build date Wed, 30 Mar 2016 10:26:19 +0000
    Security Patch Level N/A
    Product code XEF
    PDA G900FXXS1BPCL

Above is the France, (XEF), unbranded stock Samsung Lollipop, Android 5.0, firmware for you to download and flash via Odin by following the instructions and video in the links of #1.11 of 42 Galaxy S5 models - Dummies Guide. Flashing a stock firmware and kernel will unroot you and you will need to re-root again.

That should be fine. Under normal circumstances, using a stock Samsung, no-wipe, firmware will not erase your data but as always, it is better to have backups. See, Backup! Backup! Backup! NOW!

Samsung update firmwares install without wiping your phone. So, when you update, your data, etc; should be fine.
