Permanently delete Samsung keyboard?

It's complete garbage, never saves my custom words and this damn 6.0 update keeps reverting back to it even after changing the default keyboard to the Google keyboard SEVERAL times

Unless you root your phone, you can't disable the stock keyboard. Even if you root and you decide to do so, be forewarned: you might lose access to your phone. If, for any reason, the keyboard of your choosing fails to load at boot, with no stock keyboard for the system to revert to, there's no way to access your phone if it's password-protected; even if it's fingerprint protected, at boot you always have to input your password with the keyboard. Only option, should that happen, is to connect a physical keyboard via OTG.

Even when the phone was rooted it was doing the same thing...disabled Samsung keyboard and set Google as the default and some apps wouldn't have a keyboard...it makes absolutely no sense...this update has caused nothing but problems for most people

I think that most of the 60 million S5 users are happy with the Samsung keyboard. Maybe it is because you are on a carrier branded minority variant firmware or a custom ROM or rooted that you may be having issues. Just install Titanium Backup Pro from the Play Store and freeze the stock Samsung keyboard and use, say, SwiftKey Keyboard.
