Google Now vs TouchWiz

Several days ago, I installed marshmallow over lollipop. My Samsung S5 system is working fine on the new operating system. My problem is with the changes between lollipop and marshmallow. Mini instructions mention items that should be on my screens that are not. For example, there's supposed to be a cog in the application setting. It's not there. I can't find where you can change the share command to various files. Is there a resource that will help me make this transition to marshmallow? Is this happening because most instructions are for TouchWiz? Thanks
