How do I delete a widget on a full page on s6 active, Android 5.1.1?

My husband received this phone from our son and he took it to the AT&T store to have the SIM replaced and registered. When we got it, the grid of the home screens was 5x5 with a primary app line at the bottom.

Problems:
After we got it back, it's 4x4 with no primary app line and no empty space on any home page - even new ones I add. There are just pluses which apparently want me to add more apps.

I can't get rid of a large widget that doesn't float on long press, nor does it have a "-" when I click on edit.

My questions are:
How do I get rid of this large widget so I can replace it with one smaller?
How do I change the grid size to 5x5? I have been able to delete an app from the home pages, but it the space just fills in with a "+".

After looking around for quite a while, I found the answer to my dilemma. In case there are others with this problem, the answer in my case was to go into settings/personal and change from easy mode to standard mode. This allowed me to have the interaction I needed to manipulate my home pages.
