    I have a Dual-Band AC router. How do I know if my S6 is actually using it to its full potential?

    Not sure what you mean full potential. It can operate on both bands. If you are worried about speed then you can do a speed test

    Create a network in the router using only the 5 ghz band then just connect your phone to that network

    The phone doesn't use both bands at the same time. Dual band router means it can run a 2.4 and 5 GHz network. You can have each network on another standard. Such as my 2.4 GHz runs N and my 5 GHz runs AC only.
