I've had Marshmallow for a week now (US Sprint) and couldn't be happier. It's like having a whole new phone (which is awesome since my kids just got s7's, now I'm not as jealous).
I'm wondering about Doze though... I can't find it in any settings. Or is that what keeps popping up in notifications, but it's not referred to as Doze, either by Sprint or Samsung?

It confused me too. Samsung does not have a Doze app as such. It has app optimization which will put the apps to sleep if the phone doesnt move. Sounds pretty useless if you carry your phone around with you. There is an app called Doze which works whether you move around or not. It has really helped my battery life

There is no app for doze. It's built into the system and only activates when it's resting flat and hasn't been touched for a little while. It will dial down system activities that run in the background to save power.
