You cannot completely "get rid" of Touchwiz as it's the default launcher which is integrated within your phone's operating system. It's the interface that enables you to interact with the settings on your device. You can however choose from many different launchers available from the Google Play store which might give you a better user experience. Nova launcher (which is quite popular and one that I use) is one that you could try as a substitute to Touchwiz. Read the following link for instructions on how to change launchers:

Alternatively, you may simply need to restart Touchwiz if you find it laggy. To locate it, go to settings>general>application manager. Then scroll right to the "All" section where you'll see all apps on your phone listed. Scroll down until you see "Touchwiz Home". Select "force stop" (top left) then "clear cache." Reboot your phone afterwards. You should find the lag gone.
