When I use google assistant to send a text, it sends good. When I go to unlock my phone, I hear "message sent", however the message has already been sent. And I hear this whenever I unlock my phone. The only way I have been able to get rid of it is rebooting my phone.

How can I get rid of this without doing a reboot?

wow, you've been waiting 3 weeks for a possible answer? well I tested it on my S7 Edge and can't reproduce this issue at all. maybe you could try wiping the cache partition by rebooting the phone and holding the thumb key, power key, and volume up. Try clearing the cache and rebooting. I hope you get it fixed soon, that would be annoying.

My bad for being really sick and not been able to reply back in a timely manner. Thanks for your suggestion anyways

mine does that occasionally too. If I reactivate Google Assistant, it stops the message sent vocals
