The default mail app is already set as imap and as i understand it this should not be deleting the emails from the server once deleted from the phone. That said since i updated to nougat there is no option to select to stop the emails from deleting from the server.
Is there a way around this and keeping the mail on the server ?

Check on the server (go to your email with a browser). There may be a "delete emails when downloaded" checkbox.

There are no setting that allows for that on the server side email account. It wasn't a problem prior to nougat or on my HTC. The option simply is not there to keep a copy on the server or not to delete it from the server as before

Try switching to maildroid. When deleting emails with this app there is an option to just delete from device or device and server.
