How can I stop stock email app from resetting to default on reboot?

I like to use the generic Samsung email app that's pre-installed because I have 5+ email accounts to manage and none of them are the same site. It's rather tedious to sign into all these accounts with the email app, then everytime I restart my phone, the app returns to default and no email accounts are signed in on the app. Is this supposed to happen? How can I make this app stop returning to default everytime I restart my phone? I'd rather not have to go download the mobile app for each email I have, I like them all being in one place I can check quickly.
