Seems like after Verizon's last software update my battery life has been horrible! I used to make it 10 to 12 hours no problem, and now I'm looking around 8 hours if I'm lucky. Anyone else experiencing these kind of issues?

No, I have not noticed a change on my Verizon S8.
Mine has been off the charger for 11 hours and just fine at 77% moderate usage.
wow! I wish mine was half as good lola
Same happened to me. Did a cache wipe and now all is good in the hood!
how do you do a cache wipe?
- Power down the S8
- Press and hold the Volume Up key and the Bixby key, then press and hold the Power key.
- When the green Android logo displays, release all keys (‘Installing system update’ will show for about 30 to 60 seconds before showing the Android system recovery menu options).
- Press the Volume down key several times in order to highlight “Wipe cache partition.”
- Press the Power key to select.
- Press the Volume down key to highlight “Yes” and press the Power key to select.
- After the wipe cache partition is complete, “Reboot system now” is highlighted.
- Press the Power key to restart the device.
I haven't truly tested battery life. I will admit my microSD performance has taken a severe hit. Before the update, saving a video I was recording took only a few seconds. Now it takes a few minutes. A one minute 4K video took almost five minutes to save. During that time, I couldn't use my phone at all. I had this problem when I first got the phone. The June update fixed, and now the July update broke it.
