I restarted my S8 and everything changed. Why?

I turned my Galaxy S8 off for a few hours and when it came back on everything was different. Some changes I've found so far:

The icons are all round and have gray background
Game center is gone so my gaming apps are scattered
It seems to have forgot my settings and returned to defaults
Notifications are different.

I thought it was an update, but I'm still running Android 7 and the Samsung firmware says nothing has changed for over a month. Has anyone else experienced this? Anyone know how to reverse it?

An Easy launcher has been selected perhaps, instead of the normal one?

I don't think so, but if you'd like to explain how to check that I will get back to you. Like I said, it was fine this morning right up until I turned it off.

Found any fix for your issue?
I know it's a PITA, but you may want to bite the bullet and factory reset without backup to start clean.
