I have several old Samsung tablet (model GT-P7510; kernel version 3.1.10, Android version4.0.4 - a 'Galaxy Tab 10.1') and apparently Samsung is no longer upgrading this device! Essentially, got them for a now-defunct project (years ago) and would now like to repurpose them as experimental platforms (you know: biometrics, IOT, sensors, remote camera, ...). I would very much like to get the latest version of Android on them, even if I have to write the kernel myself, but I cannot find any information on how to do this. Any suggestions, pointers, etc. appreciated.

I think you can port some roms from another devices but it'll be buggy/unusable.

Welcome to Android Central! It looks like that's the highest Android version that tablet got officially: https://www.sammobile.com/firmwares/gt-p7510/GT-P7510/
