I have a Tab Pro 10.1 and although I can drag & drop to remove apps & widgets (with the icon turning red), they don't actually delete!

If you're removing apps from your home screen, it doesn't uninstall the app, it only removes the shortcut. You need to go into Settings > General > Application manager. From there, you can tap the app you want to get rid of and then tap "Uninstall".

You can also open the app drawer, find the app, hold it and drag it up to the Uninstall at the top.
