Can an AT&T model be converted into a smartwatch that works on Verizon's network? Is it easy to do?

No way to do that. You should accept the fact that a CDMA carrier will not allow any foreign device to be activated on its network. Not to mention the GSM version of the watch lacks the CDMA hardware to be functional on Verizon.
